PHO COCKTAIL
Enjoy the delectable spices of pho in cocktail form
INGREDIENTS:
2 oz Simplicity Gin No.5: Mountains of Sapa
1/2 oz triple sec
1 oz pho spice syrup
1 oz lime juice
1 dash fish sauce
1 dash sriracha sauce
garnish: sprig of cilantro, a red chili, lime wedge and a star anise
INTO THE GLASS:
Add the gin, triple sec, pho spice syrup, freshly squeezed lime juice, fish sauce and Sriracha sauce to a cocktail shaker full of ice. Shake vigorously until the shaker is very cold. Then strain into a chilled old fashioned glass with a large ice cube. Garnish with the cilantro sprig, lime wedge, star anise, and red chili.

To make Pho Spiced Syrup:
1 cup white sugar
1 cup water
3 cardamom pods, bruised
1 cinnamon stick
1 star anise
In a small pan, dry toast the spices for a minute or two until they release their aroma. In a small sauce pan, bring sugar, water and the toasted spices to the boil. Lower the heat and simmer gently for 5 minutes. Leave to cool for a couple of hours. Fine strain using a cheese cloth over a fine strainer and store in the fridge. It keeps fresh for 2-3 weeks.
