FIG AND ROSEMARY GIN SMASH

Herbal, nutty, and fruity notes come together magically in this exquisite drink

INGREDIENTS:

Drink

  • 2 oz Simplicity Gin No. 3: Rosemary & Pink Grapefruit

  • 2 oz fig and rosemary puree

  • fresh rosemary and half a fig (for garnish)

Rosemary Simple Syrup

  • 1/2 cup sugar

  • 1/2 cup water

  • 3 sprigs fresh rosemary

Fig and Rosemary Puree

  • 1 cup fresh figs (stemmed and halved)

  • 1 tbsp lemon juice

  • rosemary simple syrup (from above)

INTO THE GLASS:

Make the rosemary simple syrup: add the water, sugar, and fresh rosemary to a small saucepan and bring to a boil, stirring occasionally to dissolve the sugar. Once the sugar has all dissolved, remove from heat and let cool before removing the rosemary sprigs. Next, add the rosemary simple syrup, lemon juice, and fresh figs to a blender or food processor to make the puree. Blend until smooth. Now you can make the cocktail! Shake your gin and rosemary puree in a shaker full of ice until cool. Pour into a fancy glass and garnish with a sprig of rosemary and half a fig.

Enjoy!
